Power and Control
Wolf Dual Fuel Range Explained
Of all the brands out there (and there are many) everyone always compares themselves to Subzero & Wolf, “we’re just as good” they’ll all say. Wolf is a 3rd generation privately held company and recently celebrated its 75th anniversary. Made in the USA with factories in Madison, WI and Phoenix, AZ Subzero & Wolf have been a leader in the industry for decades not only from a manufacturing standpoint but also bringing products to market that have revolutionized the way kitchens are designed. Wolf’s iconic red knobs have quickly become the must have status symbol in the kitchen. And their patented dual stack burner system is one of things that separate Wolf ranges from the rest of the pack.

- Alvin LeungPatented Power Dual Stack Burners
When conceptualizing the Wolf dual fuel range, the engineering team at Wolf set out to make the perfect burner and they sure come close! They created a unique and patented design that provides both an extremely powerful burner, up to 20,000 BTU, and yet that same burner can provide the most gentle simmer.
We’re talking about melting butter with ease. Melting chocolate directly on the flame with out needing to use a double boiler. Heating milk or cream with out the fear of scalding.
Everyone loves to talk about how much power they can produce on the high end. We would argue that no one is going to notice the difference between 20,000 or 25,000 BTU, both are blazing hot and both will sear a steak with ease.
The key feature of the Wolf dual fuel range that allows this sorcery is the sealed dual stack burner and it is exactly what it sounds like – 2 burners stacked on top of one another.
The top set of ports is where the power comes from, the gas vents closest to the pan are fed by a thick diameter gas line allowing plenty of liquid propane or natural gas through to sear your best steak. The lower set of ports, which are also further away from the pan, are fed by a thin diameter gas line. That’s right 2 separate gas lines feed this burner.
In our showroom we love to demonstrate the control of the simmer burner by placing a $100 bill right on the grates while the flame is going. The look on our client’s face when it doesn’t catch on fire never gets old!
Griddle? Charbroiler? Wok? French Top? Flexibility & Options
We love how many configurations your Wolf dual fuel range can have and there’s a configuration for just about everyone!
Not only is there a bevy of size options: 30″, 36″, 48″ and the massive 60″ range but there are also a number of range top configurations and the bigger the range the more space you have to work with. The most popular sizes are the 36″ and the 48″
My personal favorite is the 48″ Wolf Dual Fuel Range with a Double Griddle (DF48450DG/S/P). This unit has been recently upgraded which is awesome and we talk about further in this post. This configuration provides 4 burners on the ends and a double wide 24″ griddle. I love being able to cook a big breakfast or make believe that I’m a skilled teppanyaki chef from my local Japanese steakhouse.
The newest entrant to Wolf’s line up is the dedicated Wok burner. This option isn’t going to be for everyone, but if you love wok cooking nothing comes remotely close.
The charbroiler is ideally suited for areas that have a harsh winter that limits your ability to enjoy grilled food. One warning however, you better have a very powerful ventilation system if you’re going to go with this option. Grilling creates a ton of smoke and you’ll want to make sure that you’re able to properly ventilation your kitchen or else you might be having your local fire department pay a visit just in time to enjoy what you’re cooking.
M Series Oven in 2021! New Upgraded Oven
In early 2021 Wolf made a significant upgrade to the Wolf dual fuel range. They brought their industry leading M series oven technology to the range.
Previsouly the best oven performance was limited to the wall oven but with this update everyone will be able to have the dual verticross convection system. This convection system utilizes cylindrical fans in the the rear corners of the main oven.
The shape of these fans allow air to flow the entire interior height of the unit and they also create an airflow that has been proven to achieve better and more consitnent results at any place in the oven cavity.
Your Personal Sous Chef Wolf Gourmet Mode
Wolf’s engineers and corporate chefs teamed up to create some amazing cooking automation. They’ve programed several types of dishes that guide you through a series of prompts, ask certain questions and then based on your answers creates a customized cooking program.
Take prime rib as an example. A lot of people are deathly scared to tackle a prime rib at home becuase they’re scared they’ll ruin a $125 peice of meat. With Wolf’s Gourmet mode it asks what temperature you’d like your meat (and if you say well done then unfortunately we won’t be able to sell you this oven!), insert the meat probe and hit start. There’s 4 buttons to press (Beef, Prime Rib, Medium, Start) and you’re off the races. You can stress over the side dishes and leave the prime rib to the experts at Wolf.
